It's supposed to be National Peanut Butter Day, so here's my peanut butter pro tip #1: When you open a new jar of natural peanut butter (the kind you have to stir) dump the whole thing in a bowl and use a mixer to mix it up. I use my stand mixer with the paddle attachment. Next, use a spatula to scrape the sides of the bowl and re-jar the peanut butter. Refrigerate.
Yay! No dry peanut butter brick on the bottom of the jar any more! I swear, no matter how hard I try, there will always be at least 1/4 inch of PB brick and there will sometimes be oil all over the damn place.
Pro tip #2: To make sure you don't waste even a single teaspoon of the stuff, use the same bowl and beaters to make some peanut butter cookies or the phenomenally crack-tastic peanut butter blondies from Vegan Cookies Invade Your Cookie Jar. So far, that recipe is in the lead for the title of "Most Used Recipe" from that book.
I actually prefer them without the nuts on top, though I am thankful to Southwest Airlines for making my holiday flights great ones and also for providing me with the nuts necessary to make my first batch of blondies for everyone to munch on over Christmas.
